Il Rossese dalle vigne impiantate nel 1888
Vino di colore rosso rubino con archetti fitti e di difficile precipitazione. Al naso, è speziato, fruttato e tostato. L’eleganza è la più grande caratteristica di questo Rossese; i profumi sono molto intensi e di facile distinzione come le more, le fragoline di bosco (“merelli”termine dialettale), gelso, rosa passa, tabacco e pepe bianco.
Al palato predominano le morbidezze, la glicerina e l’alcol, supportate però da una buona freschezza e una discreta tannicità e sapidità, con caratteristico fondo amarognolo, il tutto legato in un piacevole filo armonico.
Questo vino di ottima struttura ed equilibrio si distingue per intensità e persistenza. In evoluzione con un invecchiamento di 10 anni.
VINIFICAZIONE: Una parte delle uve iniziali non viene diraspata, in percentuali che possono variare secondo annata dal 50% al 60%. Fermentazione sulle bucce per circa 12/15 giorni a temperatura costante 26°/28°C.
AFFINAMENTO: 12 mesi in vasche d’acciaio e 8 mesi di affinamento in bottiglia.
